Da Nang eats better than cities three times its size. Central Vietnam's signatures were born in and around it — mì Quảng turmeric noodles, bún chả cá fish-cake soup, crackling bánh xèo pancakes — and the seafood culture is the real thing: pavement grills and tank-lined halls where you point at what's swimming and settle the price by the kilo.

The Local Canon

Start with mì Quảng for breakfast like a local (shrimp, pork, quail egg, a scatter of rice crackers), then work through bún chả cá, bánh tráng cuốn thịt heo pork rolls, and a late-night bánh mì. Most of the canon costs pocket change at specialist shops that have made one dish for decades.

Seafood by the Kilo

The seafood strips along the beach roads — especially toward Son Tra — are lined with tank restaurants: choose your clams, mantis shrimp, grouper or lobster, pick a cooking style, and it lands at the table minutes later. Confirm prices per kilo before it goes to the kitchen and you'll eat spectacularly for a fraction of resort rates.
