Can Tho is the delta's big city — a million-plus river port where the Mekong's commerce, cooking and student energy concentrate on one lively waterfront. Most travellers stay a night for the dawn floating market and discover the evening is just as good: the Ninh Kieu promenade fills with families, the night market grills seafood and bananas in sticky rice, and a lit pedestrian bridge loops out over the water.
Along the Waterfront
Evenings centre on Ninh Kieu quay: stroll the promenade past the boat piers, cross the lotus-lit pedestrian bridge, and eat your way along the night market a block inland. Rooftop bars on the riverside hotels catch the breeze and the boat lights, and simple dinner cruises push off around sunset. Come back at breakfast for bánh cống — the crisp shrimp-and-mung-bean fritter Can Tho claims as its own.
Beyond the Quay
Can Tho works as a base as well as a destination: the Cai Rang floating market is a short boat ride upstream, Binh Thuy's century-old merchant house sits among orchards on the city's edge, and rice-noodle workshops open their drying yards to visitors. The city has its own airport with domestic connections including Hanoi, so you can fly straight in and skip the long road transfer.
