Every morning before sunrise, wholesale boats gather on the river a few kilometres upstream from Can Tho, and the Cai Rang floating market — the biggest in the Mekong Delta — gets to work. Each boat advertises its cargo by hoisting a sample on a tall bamboo pole: a pineapple, a taro root, a bundle of onions. You drift between the hulls with a coffee in hand while breakfast is cooked on a boat alongside.
Going at Dawn
Boats leave Can Tho's Ninh Kieu pier area from around 5am, and the half-hour ride upriver arrives as the market hits its stride — trading is liveliest roughly between sunrise and 8am, then fades fast. Charter a small boat for flexibility or join a cheap group tour; either way, order a bowl of hủ tiếu passed up from a noodle boat mid-river. It is one of Vietnam's great breakfasts.
A Market in Slow Change
Cai Rang is a working wholesale market, not a show — and as roads and supermarkets reach deeper into the delta, it is smaller than it was a decade ago. Go with that in mind: the trade is real, photogenic and unscripted, recognised on Vietnam's national intangible cultural heritage list, but mornings vary. Pair it with a canal loop or a rice-noodle workshop on the way back.
