Meals are half the theatre of a Halong Bay cruise: long, many-course lunches and dinners built around what these waters produce — prawns, squid, clams, whole steamed fish — served while limestone towers slide past the dining-room glass. The bay's own signature is chả mực, hand-pounded grilled squid patties that Halong City is famous for across Vietnam, and no cruise menu worth its salt skips it.

What Lands on the Table

Expect a parade: fresh spring rolls, mantis shrimp or tiger prawns, sweet bay clams in lemongrass broth, squid several ways, morning-glory greens and a steamed catch finished at the table. Most boats also run a short cooking class — usually spring rolls on the sundeck — plus a sunset happy hour, and squid jigged off the stern at night can turn up at breakfast. Flag allergies or vegetarian needs when you book, not when you board.

Chả Mực & Shore Tastes

With time in Halong City before boarding, chase the local pairing of chả mực with bánh cuốn (silky steamed rice rolls) or sticky rice — market stalls and specialist shops around the old Hon Gai quarter have made it for decades. Back on the water, drinks are usually the one thing not included: lists carry resort-style markups, so check the corkage policy before bringing a bottle and settle bar tabs as the boat allows.
