Cocktail Bars and Mixology in Bali

Bali's cocktail scene has matured fast. A decade ago the offering was a sunset mojito; today Seminyak, Canggu and Ubud hold half a dozen bars doing genuinely considered work, several of which have appeared in Asia's 50 Best Bars discussions. The distinctive thread is local: arak as a base spirit, tropical fruit and spice that would be exotic imports elsewhere and are ordinary produce here, and house ferments and infusions that get around the punishing cost of imported spirits.

The rooms worth booking

Seminyak holds most of them. Bali's best-known cocktail bars sit around Petitenget and Kayu Aya, doing tightly written menus with house infusions and local botanicals. Canggu's scene is younger and more experimental, with several small rooms behind restaurants. Ubud has a quieter, more herbal take, using the jungle produce on its doorstep. On the Bukit, the cliff bars have the view rather than the bar programme, though several have improved sharply. Cocktails run 150,000–280,000 rupiah, which is Jakarta pricing.

Arak as a base spirit

The most interesting development is the rehabilitation of arak. Traditionally a rough home-distilled palm or rice spirit with a genuine safety problem, it is now produced commercially to a proper standard by several Balinese distilleries and treated seriously by bartenders, who use it where a recipe would otherwise call for rum or an unaged agave spirit. It is grassy, sharp and distinctly local. The same logic applies to brem, the sweet rice wine, which turns up as a modifier. Ask for the arak section of the menu — most good bars have one.

Why local ingredients dominate

Indonesian excise on imported spirits is severe, and a bottle of mid-range gin or whisky can cost two to three times its European price. That economics has pushed the good bars towards local production and towards making things themselves: house cordials from snake fruit and passionfruit, kaffir lime and lemongrass infusions, tamarind and palm sugar syrups, fermented pineapple. The constraint has produced a genuinely regional style rather than a copy of a London menu, which is the most interesting thing about drinking here.

Practicalities

Book the well-known rooms in July, August and over New Year. Dress is smart casual; nowhere requires a jacket. Most bars add fifteen to twenty-one per cent tax and service, shown as "++". Last orders are earlier than European habits, generally between midnight and one, and Ubud closes by eleven. Use a car, not a scooter — drink-driving enforcement has tightened and the roads to Uluwatu and around Canggu are genuinely dangerous at night. And if a cocktail seems implausibly cheap, ask what spirit is in it.
